Recipe for Pork Chops with Mushroom Sauce

We love drowning our crispy pan seared pork chops in sauce, all type of sauce and any sauce or gravy that’s loaded with flavor. That’s why our test kitchen loves this recipe. Previously, we shared an excellent milk braised pork chop with mustard sauce and it was a hit. Today, it’s all about our one pork pork chops in creamy garlic mushroom sauce. It started with another batch of our easy mushroom gravy and then we started to go crazy. We doused this creamy garlic mushroom sauce on chicken and then decided we were craving pork.

Why is This Our Best Skillet Pork Chop Recipe?

We love this version of the sauce with the pork because we added mustard to it. That’s the secret ingredient! The combination of mustard and earthy mushrooms in this rich sauce is a great balance. The mustard adds a nice tang to break up the richness a bit, yet this sauce is loaded with mushroom flavor and texture. Sure you can call it a garlic mushroom sauce or a garlic mushroom gravy recipe. It really doesn’t matter because you can control how thick you want your sauce to be.

Tips for How to Make Skillet Pork Chops with Mushroom Gravy Sauce

  • Pork chops vary in thickness so cooking times will differ. Using a digital thermometer, the internal temperature should be 145F.
  • Make sure to get a good sear on the pork chops. Your pan needs to be hot enough to get that sear.
  • Add a touch more flour for a thicker consistency and you’ll have an outstanding mushroom sauce to bathe your pork chops in.
  • Save the extra sauce! They’re perfect to pour over mashed potatoes.
  • It’s definitely a favorite and easy pork chop recipe for those days that you don’t have time to prep a ton of ingredients but still want a great home cooked meal of the family. Enjoy!

You can certainly freeze the leftovers! Make sure to let the pork chops and sauce completely cool before freezing. When you want to serve again allow the pork chops and sauce to thaw completely. Then re-heat on a skillet on low heat until the pork chops are warm.

I made this recipe this evening and replaced regular flour for almond flour. The sauce was smooth and cooked up very well. Added the chops’s and let them simmer in the sauce for 7 minutes, spooning the mushrooms and sauce over the chops. They turned out to be very moist and delicious! I will prepare this recipe again! very easy to make.

We felt the pork chops were okay, but nothing great. I didn’t have fresh mushrooms, so used canned mushrooms.

    • Diane Reply

Oh no, this recipe is not meant for canned mushrooms! There’s a huge difference between canned and fresh. You have to use fresh mushrooms.

What is the best method to cook pork chops? ›

Because one of the best ways to bake pork chops is to start in an oven-safe skillet on the stove and then transfer them into a hot oven. High-heat frying sears them to a golden brown; and a moderately hot oven (400 degrees F) bakes the pork chops gently enough to keep them from drying out.

Can you use butter instead of vegetable oil for pork chops? ›

Butter, with its luxurious richness and distinctive nutty flavor, is a classic choice for frying pork chops, whether they are breaded or not. As the butter melts and sputters in the pan, it imparts a depth of flavor to the dish.

Pork Chops – Make sure to get single bone-in thin cut pork chops so that they cook quickly and evenly. Flour – You will need all-purpose flour, but you can alternatively use self-rising flour. What tenderizes pork chops? ›

Brining is a method of soaking meat in salt water that is largely intended for increasing juiciness and flavor. It's a popular alternative to marinating that requires fewer ingredients. Why is applesauce always served with pork chops? ›

Apple harvest season in the fall coincides with the pig slaughtering season (also in the fall). To preserve these elements in the winter months during the early days of animal husbandry, pork was turned into sausage, ham, or bacon, and apples were turned into applesauce, keeping the pairing running all year long.

What is the most flavorful pork chop? ›

If your grocery store only offers really thinly-cut chops, just go to the meat counter and ask if they can double-cut them (cut them a bit more thick) for you. Bone-in: I much prefer bone-in pork chops (specifically, rib chops or loin chops) because they have the most flavor.

What spices tenderize pork? ›

Apply dry rub and refrigerate the pork for at least 8 hours.

Create your dry rub by combining 2 tsp (6 g) of salt, 1 tsp (2 g) of dried herbs, and ½ tsp (1 g) of black pepper. Blot each side of the pork chops so they're totally dry, and then coat the meat with the seasoning.

Should you wash off pork chops before cooking? ›

Washing beef, pork, lamb, or veal before cooking it is not recommended. Bacteria in raw meat and poultry juices can be spread to other foods, utensils, and surfaces. We call this cross-contamination. Some consumers think they are removing bacteria and making their meat or poultry safe.

Is it better to cook pork chops in butter or oil? ›

I use both! At the same time! The butter helps achieve that golden brown color and adds more flavor, but you need the oil, too, because it has a higher smoke point and keeps the butter from burning. How long do you cook pork chops in a frying pan?

Is it better to bake pork chops covered or uncovered? ›

Some baked pork chop recipes do require that the pan is covered with either foil or a lid. It creates steam and ensures that the meat is tender and juicy. Those recipes typically require a long cook time and may add vegetables to the pan, and some uncover the chops to finish browning them at a higher temperature.

How do you get the most flavor out of pork chops? ›

Like steak or chicken, pork also needs a lot of salt to bring out all the flavor. If you really want to be fancy, you can brine the pork chops in some salt water (season it with other stuff like whole peppercorns and bay leaves).

Can pork chops be a little pink? ›

If fresh pork has reached 145°F (62.8 °C) throughout, even though it may still be pink in the center, it should be safe. The pink color can be due to the cooking method or added ingredients.

Is it better to fry pork chops in olive oil or canola oil? ›

What's the best oil to fry pork chops in? ›

Heat the canola oil over medium to medium-high heat. Add the butter. When the butter is melted and the butter/oil mixture is hot, cook 3 pork chops at a time, 2 to 3 minutes on the first side. Why does my breading fall off my pork chops? ›

What should I soak my pork chops in? ›

You can make an effective brine just with salt and water, but additional seasonings do help. If you are just looking to brine one (1) pork chop or tenderloin, or up to 4 at a time, a quick ratio of salt to water is 4 cups of water and 3 Tbsp of salt / for 30 minutes up to 4 hours.

How do you get flour to stick to pork chops? ›

How do I make sure my pork chops don't dry out? ›

Add a splash of chicken stock to prevent the meat from drying out in the oven. Before transferring to the oven, add a splash of chicken stock to give an extra layer of protection against drying out. Adding a few tablespoons of butter to the top of the chops doesn't hurt, either.

How do you make pork soft and tender? ›

How do you make pork soft and tender? Soak your pork in a salt-based brine before cooking it using your desired method. Pork chops need to soak between 12–24 hours, an entire pork tenderloin needs to soak for 6–12 hours, and an entire pork loin requires 2–4 days of soaking.

Why are my pork chops always dry and tough? ›

Overcooked Pork Chops Are Tough

This is partly due to carry-over cooking. Even when you take the chops out of the oven or off the stovetop, they still continue to cook a tiny bit due to the retained heat. And it's often this little bit that can take them from tender to tough.

How do you make pork chops moist again? ›

What if my leftover pork chops are already dry? Occasionally I overcook a pork chop and not even this oven method can revive it for leftovers. In this instance, slicing the chop very thinly and pan cooking it with some fat (either butter or olive oil) and a flavorful liquid (think: broth or soy sauce) is my best bet.
