My husband has another woman in his life.

Auntie Anne.

He can’t get enough of her soft pretzels and gets one any time we head to a mall or on a road trip.

But I put a kibosh on his love affair with the pretzel maven.

Homemade Soft Pretzels (30 Minute Recipe) (2)

This homemade soft pretzel recipe is everything you love about the classic pretzel chain but so much less expensive.

For less than the price of one pretzel at Auntie Anne’s you can make a whole batch of homemade pretzels that are just as fluffy and chewy as hers.

Ingredients

To make these you need:

Homemade Soft Pretzels (30 Minute Recipe) (3)

  • Water– Warm but not hot water
  • Yeast– 1 packet of active yeast
  • Salt
  • Sugar– Granulated
  • Flour– All purpose. The amount you’ll need will vary slightly because you’ll need some extra to flour your work surface and hand
  • Egg

How to Make

Homemade soft pretzels are pretty easy to make!

To do it, preheat the oven to 425 degrees and line a baking sheet with parchment paper or a silicone baking mat.

Set the baking sheet aside.

Then, stir the yeast into warm water followed by the salt and sugar.

Once you’ve made the yeast mixture, stir in the flour slowly, adding one cup at a time.

Keep stirring the mixture with a sturdy wooden spoon until the dough is thick, adding flour until the dough isn’t sticky any more.

Poke the dough with your finger.

If it ‘bounces back’ it is ready to knead.

To knead the dough, turn the dough out onto a floured surface.

Homemade Soft Pretzels (30 Minute Recipe) (7)

Knead the dough for about 5 minutes and shape into a ball.

With a sharp knife, cut the dough ball into roughly 1/3 cup sections.

Then roll each dough ball into a rope about 20 inches long.

Homemade Soft Pretzels (30 Minute Recipe) (9)

Once you have your long rope, take the ends and bring them together until you form a circle.

Twist the ends then bring the down towards yourself and press them down into a pretzel shape.

Homemade Soft Pretzels (30 Minute Recipe) (10)

Repeat this process with each dough ball until you’ve made all of them into pretzel shapes.

Then, beat the egg in a small bowl.

Dip the shaped pretzels into the egg wash, evenly coating both sides.

Place on baking sheet and sprinkle with salt or sugar depending on your personal preference.

Homemade Soft Pretzels (30 Minute Recipe) (12)

Bake the pretzels for 10 minutes at 425 and then turn the broiler on and bake for 5 more minutes to brown the tops.

Can I freeze homemade soft pretzels?

Yes!

To freeze them, make them as instructed above and let them cool completely.

Once they are cool, put them in a sealable freezer safe bag.

Seal the bag and freeze the pretzels for 3 months.

To enjoy, defrost one in the microwave on defrost and then warm in a hot oven.

Tips and Tricks

  • You want the water to be just warm to the touch and not too hot or you will kill the yeast.
  • To make pretzel bites, roll the dough out into long ropes and cut 1 to 2 inch sections of dough. Dunk them in the egg and bake until the pretzels are golden brown.
  • Serve them with your favorite topping and dipping sauces. Savory pretzels pair well with cheese sauce or mustard while cinnamon sugar ones are delicious with a powdered sugar glaze.

FAQs

What is the secret ingredient which makes a pretzel taste like a pretzel? ›

Lye. The dough is simple; take a basic yeast-risen dough that can be readied in an afternoon. But the trick to great pretzels is dipping the pretzels in a liquid wash before baking — and not just any wash, but a combination of water and lye. That's what gives pretzels their terrific color, texture and flavor.

Why do you boil soft pretzels before baking? ›

This bath essentially gelatinizes the outside of the pretzel, preventing it from fully “springing” during baking (as bread does) and giving pretzels their signature chewy crust. It also gives them their unique and indelible “pretzel” flavor.

Do you use baking soda or powder for soft pretzels? ›

Baking Soda + Boiling Water Pretzel Bath

Slowly pour in your baking soda and whisk until completely dissolved. Dip your pretzels in the bath using a slotted spoon for 30 seconds, flipping once during this time. Drain and place back onto your greased parchment lined baking sheets.

What gives soft pretzels their flavor? ›

What Gives Pretzels Their Pretzel Flavor? You have baking soda to thank for that distinct pretzel flavor. Baking soda is highly alkaline and imparts that subtly metallic taste onto the dough before your pretzels go into the oven. Some recipes call for a lye bath, which does the same thing.

What is the secret ingredient in pretzels? ›

Traditional Bavarian pretzels are dipped in a lye solution before they are baked. Lye, also known as sodium hydroxide, is essentially the same stuff that's used to make soap and clean drains. It can even dissolve glass.

What is the secret solution for Auntie Anne's pretzels? ›

While dough is rising, prepare a baking soda water bath with 2 cups warm water and 2 tbsp baking soda. Be certain to stir often. After dough has risen, pinch off bits of dough and roll into a long rope (about 1/2 inch or less thick) and shape. Dip pretzel in soda solution and place on greased baking sheet.

What happens if you don't boil pretzels before baking? ›

Like bagels, pretzels are made in boiling water prior to baking to give them their snappy outsides and chewy insides (messy!). Soft pretzels must be boiled, or dipped in a baking soda bath (or lye if you're gusty and strict with your pretzel traditions).

What is the purpose of putting an egg wash on the pretzel? ›

The egg wash on the pretzels gives them a little shine, and I find it softens the exterior a bit. For a more traditional taste, omit the egg wash and just use salt when the pretzels come out of the water bath.

Do you boil pretzels in baking soda or baking powder? ›

When it comes to pretzels, you boil them in baking soda water before you bake them. As such, instead of using them in the batter, they're used on the outside of the pretzel. The baking soda is also not being combined with an acid, so it's not being used to lift the pretzels.

What is the best salt for homemade soft pretzels? ›

Ideally, you would use pretzel salt when making pretzels. But this type of salt is not always easy to find in the store. That's why many people turn to kosher salt instead. And indeed, these two types of salt have a lot in common.

What is a substitute for lye bath? ›

Baking soda that's been baked can be used at a 1:1 ratio for the amount of lye in your recipe. When your pretzel recipe calls for a lye bath, just dissolve a third of a cup of cooked baking soda for each cup of water you are using, then dunk the pretzels in the solution for three to four minutes.

How do Germans eat soft pretzels? ›

Pretzels are either eaten plain as they are, or you can buy them with cheese on them or sliced with butter and chives spread on them.

How do you keep soft pretzels from getting soggy? ›

Refrigerating soft pretzels can turn them soggy and affect their flavor. Freezing pretzels, however, will help retain their texture and softness. You can freeze most food that's properly stored indefinitely, and the food will still be safe to eat.

How do you moisten soft pretzels? ›

Drizzle a small amount of water over the pretzel so that the pretzel is moist but not soggy. Wrap your pretzel in aluminum foil and place it in the oven for five minutes. If you want a crispier exterior, leave the aluminum foil off and just place the pretzel directly on the middle rack of your oven.

What is the Flavouring on pretzels? ›

Salt is the most common seasoning, or topping, for pretzels, complementing the washing soda or lye treatment that gives pretzels their traditional skin and flavor acquired through the Maillard reaction. Other toppings are mustard, cheeses, sugar, chocolate, cinnamon, sweet glazing, seeds, and nuts.

What is the chemical dip on pretzels? ›

The dipping stage normally takes just 10-15 seconds of exposure to the hot alkaline solution which is about 200°F. Traditionally the solution was a mixture of sodium hydroxide and water. Today, most production involves the use of sodium carbonate and bicarbonate solutions which are not as caustic as NaOH.

What makes pretzels smell like pretzels? ›

After removing other scent molecules individually, the researchers found two molecules that are essential to the unique pretzel scent: 2-acetyl-1-pyrroline, which has a roasted smell, and 4-hydroxy-2,5-dimethyl-3(2H)-furanone, which has a caramel smell.

What is pretzel flavor? ›

Tasting Notes:

The typical pretzel has a pleasant cracker-like flavor, a crisp, brittle texture and a brown glossy surface color. Salt crystals are often sprinkled on its surface to make them taste more appealing. Pretzels have a moisture content of anywhere from 2-4% and therefore have a very long shelf life.
